I am currently working on the french wikipédia page about unicon.
I can pretty easily find informations for unicons 17 - 21 on the iuf registration website, but for 1 - 16 I have basically nothing except for what is on the english page.
Does anybody have any informations on unicons (dates, events, results / world records set, specificities of one year, etc…) ?

There are results for some earlier Unicons there. Some years have a list of World Champions in the zip-files, sometimes even sorted by country.

Thank you for volunteering on the task! The information about unicycles as a sport on Wikipedia leaves much to be desired. I don’t know what stage of work you are at, but in general, it makes sense to have some structure of interconnected pages about unicycling. Unicon page would be a supporting one in such a structure. The current sites http://unicycling.org, http://unicon20.fr and http://unicon21.us are examples of a structure - individual pages of these sites could correspond to Wikipedia pages.
Writing articles for Wikipedia meets another challenge: Wikipedia requires articles to be based on information from secondary and tertiary sources. It does not welcome primary sources, and in fact prohibits your own research. Since there are very few publications about unicycling sports, it is difficult to satisfy Wikipedia’s requirements.
Regarding your question specifically about Unicons, your first contact should be @johnfoss. As far as I understand, John was one of the founders of the whole concept, was at all past Unicons, and knows a thing or two about their history. John is a very nice guy, and he can even let you try his unicycle, which has been to all the Unicons However, information from John will be “own research”, and is not suitable for Wikipedia. You can try to persuade John to write a book (and then make a Wikipedia article based on the book), or write something on his website, or even here on unicyclist.com. Something like that.
You can use information from the UIF site in a limited way (it will be considered a primary source), but you must definitely add something secondary / tertiary. Information from unicycling-software will be probably considered your own research, which is not suitable for Wikipedia (but you can publish the results somewhere / here in the hope that it will generate secondary sources over time).
Another option: use the Wayback Machine. There you can find information about past competitions. For example, here you can read about Unicon X (by Alberto Ruiz): UNICON X (10th World Unicycling Championships) - Beijing, China - August 1 to August 8, 2000
