I wanna build up an ultimate wheel. I’ve got a couple of questions:
1)is it better to build an ultimate wheel with the wooden insert or the single bar? and
2) does anyone make the bar insert with multiple threaded holes so various crank lengths can be used?

What do you mean by “better”?
It’s certainly easier to build one with a wooden disc. Especially given
the availability of UW hardware from unicycle.com. The wooden disc also has
the advantage of allowing you to push sideways against the disc to maintain
balance.
The bar insert would most likely be lighter and provides more room to grab
the rim for tricks.

The wooden disk will be much easier to make and learn to ride on. For grab tricks (and carrying) you can cut a couple of holes in the wood.
