One of the uni ‘disciplines’ I do is speed. I’m working my way up
speedwise while changing wheel and crank sizes all the time. My PB on
a 24" was 10.8 mph (one-minute average), with 102 mm cranks. Tonight I
sustained 9.6 mph for a minute using 150 mm cranks. I’m still
progressing.
My average speed is a lot lower. I have no single ‘comfortable’ speed.
Sometimes after a speedy section a cadence of less than 60 rpm feels
most comfortable.

Yes, on a 24". Another 2.5 mph from 127mm and 89mm cranks? Someone can do it. Someone in Japan probably already has. They do some races with unlimited 24" wheels.
Interestingly enough, the 100-meter Guinness record has always been from unicycles with race-regulation wheel and crank sizes. The current record was done on a Miyata just like what I used to ride.
I looked up last year’s NAUCC track racing records. My interest is in my age group. According to my calculations, the winner was turning his wheel about 2.9 revolutions per second. Does that sound right? Is it really possible to turn a unicycle wheel almost 3 times per second?
