Simple invention idea for unicycles with Schlumpf hub - Is this a viable concept?

That’s the way I would do it. Sticks out less than a cap that covers the button when it’s pushed out.
Do those dust covers screw in? If so, that could be the easiest solution. If not, it has to be seen whether they clamp strong enough to widstand the forces of an unintentional shift. …and if they can be removed easily enough when the rider wants to re-establish the possibility of shifting.

Yes, you took them off with either a plain screwdriver or Allen key.

I think that the injection-moulded plastic ones I remember from the past would have had enough clearance in the back to sit over the button (they typically went over a flanged nut, or a bolt on some, on the end of the cotterless BB spindle). That flanged nut is essentially a bit like the button. Some of the covers I looked at on Amazon just now were turned aluminium and didn’t look like they you have enough machined out on the back – but that was just a cursory glance.
