Everytime, or at least very often, when I quite someone (I copy text, then select reply with quote) my post is published without the quote but with an edit note (the pen) instead. When I edit the post to add the quote again my post appears witt the quote and then 2 edit pens.
Usually when instantly editing, no edit pens appears at all. Edit: So this is two weird behaviors. Let’s see if an edit pen appears now. Edit: No it didnt.
I am on mobile browser on Android. Does this happen to others than me?
On that point, it seems that the edit pen appears only if you edit your message after a certain period of time. Maybe 5 minutes? I guess Discourse developers thought that people are used to edit their messages in the first minutes after publishing, so that the new text can be considered to be part of the initial message. No need for edit pen, then!
I had no problems with quotes so far, except it sometimes doesn’t offer me to quote. Sometimes the page/java script didn’t load correctly, I think. A reload fixes that and a cursor edit problem too. I use Mull (Android,f-droid) because it can upload my videos/images (Firefox based) or seldom I use DuckDuckGo (Android) which doesn’t upload my media, maybe I restricted the access. So try different browsers and maybe check traffic blockers like VPN/ublock origin/adguard etc. which I use except adguard.

My main problem isn’t spelling, but that the text I quote disappear. Now I have quoted some text from you above by marking it (pasted below without brackets)
What happens is that this quote is NOT the first thing in my post. AND I get an edit pen symbol. Without actively editing anything. Let’s see what happens now. Quote first, or the edit pen? Edit: Obviously it worked correctly this time around.
