nimbus x frame questions

I was wondering what the biggest offroad tire I could fit in the 29 nimbus x frame

As far as I know there is no Nimbus X 29" frame. There is, however, a 29" Nimbus frame. This frame was designed to fit all 29" tyres, including the largest of them all, the Schwalbe Big Apple 29x2.35".
