Why would bicycle people want an eccentric wheel? I followed your second link and came accross the Hula Bike. Now that’s interesting. That might be worth trying…
what’s wrong with setting the effective rim diameter yourself, rather than using one of the rims on their list, seems to work for me.
You’d have to get the rim measurements yourself, but you have to get the hub measurements from somewhere else to do this with a unicycle hub anyway.
