We have the same here, but they’re just Mountain Oysters, and they’re goat testicles. Taste quite nice with vinegar if I do say so myself.

As a student I used to peel the meninges from about 20 pig’s brains
every morning, as the first step in the purification of a protein that
we were trying to crystallise. I /always/ felt hungry when I was
peeling them, but I’ve always assumed it was just because they arrived
from the abbatoir at about 10:00, which is when I’m about ready for
elevenses.
I’ve got a picture somewhere of me juggling with them. Unfortunately
I’ve never got round to scanning it, and the box that it should be in is
not readily accessible.
