Oops, didn’t answer the question. But depends on what type of trails and if you want lift-serviced, shuttles or more adventure enduro ride-uphill yourself. There are many great tours where you can ride 500-1200m uphill or forest roads and ride down hiking trails.
South Tirol offers all of the above and is probably my favorite general area (e.g. Villanders, Italy). But so does Switzerland. Austria has a lot but you have to know where to go and/or experiment. Contact me if you ever plan to come.
