I have not see her post here for a while but @Cedar_Dobson1 is based in Dublin now. Not near you perhaps but she might know of other riders in the country.
She posts rides regularly on Strava, so you might have better luck finding or connecting with her there.

Cycling infrastructure is poor. Depending on how far you want to go I suppose or what style of unicycling.
