im switching to plastics for flat. do you have to turn the pedals a certain way because they are not coming off

Yes, turn the right one to the left (anticlockwise) and the left one to the right (clockwise).

If you’re standing behind your unicycle, both pedals unscrew towards you. They’re made like this so that they will tighten while you ride.
