One of the requirements for level 1 is to mount “unassisted”. Does this
mean without holding onto something, or is it only that no other person
is to assist?

This means no support at all. In theory, you are on a flat plain with nothing
else around (except a unicycle). But if you want to do it on gravel or ice,
that’s okay too.
It also means no curb or other wheel-stopping device.

Yes.

Stick with it, and you won’t have to hold the wheel for long (unless you’re a
short guy on a Coker, then it might take a little longer…

Is it acceptable to hold the wheel with one hand while mounting?
I know it sounds awkward, but I found it easier to learn to freemount that way.

Definitely true. The advice here has saved me a lot of practicing though.
