Sealed pedals use a cartridge bearing that has a simple seal to help keep out dirt and contamination.
Unsealed pedals use loose ball bearings. The loose ball bearings are not inside a sealed cartridge and are more vulnerable to contamination.

Yeah, Jims come with 2 sets of pedal pins, I have long pins in both my pairs
I just put some of the yellow ones on my Torker LX. The LBS gave my a deal on them cuz nobody else wanted them haha.
