MMMmm, Quesadeas

MMMmmmmm, quesadeas (pardon my spelling).

I just had a lunch of 4 super cheesy home made quesadeas. For anyone who’s never had anything but taco bell(shudder), you must try them. They’re super simple to make.

This is my usual recipie:
Just get some thin, 8" flour tortillas, some sharp cheddar (that’s what I prefer), some butter or margarine, a cast iron pan (good to have anyway), and a knife. Cut enough cheese 1/4 in thick to cover a little less than half the tortilla, and set aside. Then cut a liberal amount of butter or margarine (better to have more than less, keeps the tortilla soft), and put it on the pan. Put the stove on low-medium (mostly on the lower side), and partially melt most of the margarine (or butter). When it makes kinda a butter puddle on the pan, place the tortilla on it and use fingers to press it on so that that entire side of the tortilla gets some butter or margarine on it. When it begins feeling kinda soft and flexible, flip it, adding margarine or butter if needed. Once flipped place cheese on it so it covers a bit less than half the tortilla, and fold the rest of the tortilla over. Flip it about every 30 seconds until the cheese is really melted. For the final bit of cheese melting, you don’t need the pan stove burner to be on. Once the cheese is adaquately melted, take the finished quesadea and apply one’s favorite salsa liberally, then eat :smiley: .

That’s my favorite way, cuz I like melted cheese, and it’s really simple to make, but please share recipies. You can also put stuff in the quesadea along with the cheese. Bell peppers and onions are good, along with pretty much anything you’d put in an omlet. You can also cook vegetables on the side, and then put them in the quesadea later.

Do the same thing but go to Sam’s club and get the pre-grilled frozen chicken…and put that in…YUM!

Its no longer a quesadilla if you add chicken, at least thats what i think, the name quesadilla comes from the spanish word for cheese: queso, but i`m no expert in mexican food

I use chicken or beef fajitas, onion, cheddar cheese and refried beans in my quesadillas then top them with a dab of sour cream.
If you want something different, try a breakfast quesadilla with scrambled eggs, sausage or bacon and cheese, yum-yum!!!

That’s called a breakfast burrito…hehe

Never really thought about it, but it is just about the same thing:)
