Northern California: This list is old, but still provides decent info about many trails:
Santa Barbara: Spectacular trails we rode at the 2005 MUni Weekend. I don’t remember the names.
Moab, Utah: Tons of amazingness!
Phoenix, Arizona: Fabulous technical trails on South Mountain and at Phoenix Mountains Preserve.
Hawaii:
Maui: Some nice trails on Mt. Haleakala
Oahu: Some beautiful trails on the back (northeast) side of the Honolulu Forest Preserve
Those are some of my favorites.
The Tahoe area trails on John’s list and Parrott’s Ferry Downhill in Angels Camp.
I tried to find a video of the trail to post here but couldn’t, it seems to be sort of a local’s secret. Found out from the owner of the bike shop in Angel’s Camp; if you’re ever down there, be sure to check it out.
Some must-rides in SoCal are Noble Canyon, Iron Mountain, G-Spot & Hummingbird, Suicide connector & Dead cow. And of course, one of the very best in the US would have to be Downieville downhill. These are very technical, advanced trails, not for beginners. 
For downhill, ski resorts would be a good place to check out.
Trails desinged for bikes may be bad for unis ie ramp type jumps, banked turns, stunts requiring high speed, and large drops.
A few places that I think have a moderate amount of uni friendly stuff are Northstar At Tahoe, Mamouth, and Killington.
Another problem, I bet, is there are pobably small variety of uni friendly trails and gaps in ability levels for what is there.
Best trails or best areas for trail riding?
THere is a ton of riding in the desert, but it’s the desert, so if you like trees and shade…go to the mountains 
I have lived and ridden in N and S California, it is good, but it’s California; sorry guys, nothing personal.
Honestly, one of the best regions to ride is in the Southeast USA. We have areas of slickrock, XC, steep technical downhills, professional trail building, you name it, we got it AND unlike so many places it is rideable year round.

Just don’t show up in the southeast in the summer. 
That whole sweat evaporation to help keep you cool doesn’t really work when the air is already supersaturated.

I’m partial to New Hampshire. Granted, I grew up there and learned to muni there There are a lot of places you can go muni, at all kinds of skill levels
Yeah, that’s a problem, but only six months out of the year 
Actually, the humidity and heat combo is only bad from mid June to mid September, so three months, but then when it’s nasty in the valley I head to the mountains of NC.
We’re looking at an Oregon move in just over two years, riding access and skiing access are top of the priority list. So far Eugene and Corvallis/Salem are top of the list. Ashland would be nice, as would Hood River, but the job thing is a problem in those smaller areas. We also thought about Bend, but it’s too cold over there for my Southern Bride 
Mmmm, Ashland, heart of the Rogue Valley, awesome riding, ski hill just outside of town, an hour to Crater Lake, and hour to the beach, warm and lots of fun, but for the lack of jobs…
I wish the mountains were a bit closer (about a 5 hour drive - one way), they would make for a nice escape. Last summer I found that the best time to go out is in the rain, non thunderstorm of course.
You just want to make sure you’re done before the rain is done. Nothing like that heat that sets in after the sun comes back out after a nice summer rain.
